Osso Buco

Ingredients

• Cuisine Solutions Osso Buco

• Four 8 oz. pieces pre-made pizza dough

• 4 teaspoons shredded mozzarella cheese

• Egg yolk


Preparation

Preheat the oven to 350 degrees. Reheat the Osso Bucco. Roll 4 pieces of pre-made pizza dough weighing 8 oz. each and leave them under a paper towel. Remove the fat and bone from the Osso Bucco and flake the meat. Reduce the Osso Bucco sauce by 2/3 until thickened. Spoon 3 oz. meat and sauce onto half of the dough. Sprinkle the meat with 1 teaspoon shredded mozzarella cheese. Carefully brush the edges of the calzone with egg yolk. Fold the dough over and impress fingertips into the perimeter of the dough disk. Crimp the edges to seal well. Place on a baking sheet and brush once again with eggs. Bake at 350 degrees until golden brown. Serve warm with sauce on the side for dipping.

• 4 oz. grated Parmesan cheese

• 4 oz. breadcrumbs
• 
Loaf of Italian bread or crackers

Preparation

Reheat the Osso Bucco and remove it from the pouch. Put the sauce in a pot and slowly reheat it. Discard the bone from the middle and remove the ring of fat from the shank. Using 2 forks, flake the meat into shreds and place in the sauce to cook for 3 minutes. Place 3 oz. of cooked white beans into a mixing bowl and combine with the hot sauce and meat mixture. Pour the mix into a baking dish and sprinkle with a mixture of 4 oz. grated parmesan cheese and 4 oz. breadcrumbs. Place into broiler or oven at 475 degrees, or until cheese is a golden brown color. Serve hot with bread and crackers.
