Product Management
Due to our superior cooking method Cuisine Solutions products
offer a frozen shelf life of 12 to 18 months. This extended time
allows for greater flexibility in placing orders and also helps
decrease food waste.
Products can be prepared for use by:
- Taking them directly from the freezer for immediate use, for
example, when a last minute order is placed
- Thawing them in a cold room/refrigeration 32-38° F ( 0-3
°C) for 12 hours. This method allows you to quickly heat the
food or serve it cold.
Once thawed, products can be kept up to 3 days at 32-38° F
(0 -3 °C).
Re-heating Method
Refer to the heating chart, included in all packaging, to
determine the optimal time and temperature for a given product.
In general, the preferred heating method is in a convection or conventional
oven, after removal from the plastic pouch.
Sauces lend themselves best to using the 200°
F hot water method for heating, or the 140° F water holding
method.

Banquet
For optimum food cost-efficiency, heat 80% of guaranteed customer
count. When an accurate count is given by the banquet manager or
captain, heat remaining entrees if needed. If plated meal count
falls below guaranteed customer count, the extra meals are re-sellable
at full menu price for future functions.
